There are no U.S. grade standards for Yam. These instructions have been developed by the Specialty Crops Inspection Division to assist officially licensed inspectors in making inspections, writing certificates and to assist in the proper identification of specialty type fruits and vegetables.
Yam (Name, Chinese Yam, Cush Cush, Greater Yam, Lesser Yam, Boniato) is cultivated in the Asia, Caribbean and Latin American regions. It is an enlarged rootstock which somewhat resembles the sweet potato in general appearance. It should not be confused with the sweet potato as it belongs to a different family.
